Your choices are more limited by your transmission than they are by your flywheel.
If you have a 5 speed, the world is your oyster :)
If you have a 6 speed, look up the word "compromise" in the dictionary.
 
In that case, E36 M3 or E34 M5 are good options. Keep Clutch Masters in mind because they have some very good and reasonably priced options. I went with the CM kit with one side organic and one side Kevlar. I find it is quite driveable on the street once you get used to the stiffer pedal.

You have surely been warned that with a 10lb flywheel on an M54, you will have significant gear lash noise even if you go with a sprung hub disc :)
