Now's the time to see Poland before its big cities go the way of Prague. Bulgaria and Romania are cheap, not that it's unsafe but I wouldn't recommend it for someone that hasn't traveled a fair bit.
Anyone that's in Venice, I think Slovenia/Lubjliana is seriously under the radar and very lovely for a weekend trip.
I agree with everything you mentioned. Bulgaria, Romania and that side of town are for those who have done some travel before. Same goes for Estonia, Latvia and Lithuania. Prague has pretty good tourist infrastructure now.

You can save a bunch of money from trips while still having fun. Breakfast is one of them. Try to get a hotel with a mini fridge or air bnb with a decent kitchen. Have some fruit and cereal in the am. Lunch? You can get sandwhiches or a wrap from a grocery store or market. Marks and Spencer for example has a £5 lunch meal trip.
The free breakfast at hotels in the EU is sorta rare. Your usual tourist type hotel will be around 10€ head. Places like Ibis, Menninger etc around 5-6€
We make it a point to have 2 proper going out meals for dinner. Otherwise the 2€ bottle of wine, bread and some meats perfectly fine or Ye Old Kebab shop
Don't drive a car into whatever large city you will be based in saves on parking. Parking can get pricey... Last time in London I managed to snag parking for £15 a day for 4 days. Well near Hammersmith.
What id do is rent the car first at the airport, explore what needs a car to explore and drop it off before heading into the big city. Public transit in EU is pretty damn good. Some cities will even have a group pass for 1-3 days which will be cheaper than paying for single fares.
If you do London don't buy the tourist oyster card. Just get a proper oyster card or use your CC. Another tip for London, you can purchase the London Tourist attraction pass from Costco.co.uk for cheappp
